Vegetarian Tacos
Carl and I love to eat, a lot! lol. We love trying new foods; since Los Angeles is such a melting pot of nationalities, we are exposed to all sorts of foods and unfortunately, eating unhealthy can be very easy. Therefore, we have agreed that we will try our best to eat healthier foods during the week….not only for our health but also because we need to be an example to Julianna on how to make healthy eating choices.
As a Mexican (or a Hispanic for that matter), red meat is abundant in our cuisine – not the healthiest. Carl and I decided to go on a hunt for healthier recipes and we came across this awesome recipe for Vegetarian Tacos. They are absolutely delicious and I totally recommend you try it as well. Not only are they good, they are super easy to make and are very fulfilling. If you do, please let me know your thoughts!
VEGETARIAN TACOS
2 mangos, diced
1/2 red onion, diced
1 red bell pepper, diced
Juice of 1 lime
Handful of cilantro, chopped
2 avocados, diced
1 (15-oz) can black beans, drained and rinsed
Salt to taste
10 to 12 corn tortillas
Hot sauce (optional)
1. Place mango, red onion, bell pepper, lime juice, chopped cilantro, avocado, and black beans in a medium-sized bowl. Mix well.
2. Add a few generous pinches of salt. Taste and adjust seasoning. Chill until ready to serve.
3. Char your tortillas (be careful not to burn them as they burn easily). Place about 1/2 cup of the filling in the center of each tortilla. Serve with your favorite hot sauce, if desired.
